JUN Tea - "the champagne of Kombucha" .... Jun is a little sweeter and lighter than traditional kombucha, with less of a vinegary bite, though still pleasantly tart. It brews faster and is more effervescent at first ferment than kombucha, so although flavours can be added, they're not necessary to get a great taste and fizz. Many who don't like kombucha LOVE Jun as the delicate flavour, super bubbles and floral honey notes come through, making it a wonderful "special occasion" drink. This kit includes a JUN Tea SCOBY and enough low pH JUN Starter to make 4 litres of JUN tea. The process then becomes self replicating. Unlike a Kombucha SCOBY, a JUN SCOBY can easily digest the wild yeasts specific to raw honey - PLEASE BE AWARE - THIS CAN LEAD TO A GREATER ALCOHOL CONTENT (around 2.0% ABV). My Tang.E.T. SCOBYs are grown in an established Micro Brewery under MPI registration and are VERIFIED BY TradeMe. Independent audits ensure the highest standards are met for my "living" probiotic teas (and believe me they are stringent). Lab testing is undertaken to ensure food safety compliance. All my SCOBY's are grown specifically for sale in organic green and black tea batches - they are NOT cast offs from kombucha making. Neither are they sold as "pet food" (potentially circumventing the stringent requirements/costs and consumer protection associated with MPI). They are fresh and juicy and come with a batch of the brew they were grown in, so you can "hit the ground running" - no waiting for the SCOBY to "acclimatise".
